It is an extraction perfect for aeration, emulsifying and coagulating to be used where eggwhite is needed..
- It’s a high-quality protein isolate derived from potatoes.
- A food ingredient based on plants is used to innovate products, which offers an excellent texturising process.
- It can gel sweet and savoury ingredients at 85°C and is a great substitute for milk protein, egg whites, whole eggs, albumin powder and gelatine.
- Used to create bakery products without gluten, analogous to meat (vegan products), non-lacteal and "free" from meat.
Potato protein or potato whip( egg replacer) is a natural protein extracted from non-GMO potatoes that can be mixed with water to make a meringue, macarons, and mayonnaise and improve the cake's texture. The dosage depends on the application; usually 8-10 g of protein per 100 g liquid ( equivalent of 100 g egg whites).
It is suitable for vegans and vegetarians. Ingredients: potato protein extract (this is not potato starch). It may contain traces of gluten, milk, eggs, nuts & sulphites.
